Ingredients
1 tsp vegetable oil
1/2 onion finely chopped
1 bay leaf
1 tsp ginger-garlic paste
1 green chilli, chopped
1 cup rice, rinsed
1 cup mixed vegetables - cauliflower, carrot and peas
4 cups water
Salt to taste
Freshly ground black pepper ( pinch)
Preparation
In a skillet over low-medium heat, heat the vegetable oil.
Add the bay leaf and then onion and sauté till translucent.
Add the ginger-garlic paste, and green chilli. Cook for about 1 minute until fragrant.
Add the rice and stir well to combine.
Add the vegetables and the water.
Cook until the rice softens.
Season with salt and pepper and serve hot garnished with fresh , finely chopped coriander leaves.
