Check out this shrimp delicacy blended with veggie goodness.
1 tsp oil
1 green chilli, finely chopped
500 gm shrimp, peeled and deveined
1/2 cup finely chopped spring onion
1 medium-size tomato, finely chopped
1 cup chopped button mushrooms
1/2 cup water
Salt and pepper to taste
In a pan, heat the vegetable oil.
Add the green chilli and shrimp. Sauté for 5 minutes until cooked through. Remove from the pan and set aside.
Return the pan to the heat and add the spring onion, tomato and mushroom.
Sauté again till the tomato softens.
Stir in the water to make it slightly mushy. Season to taste with salt. Top with the shrimp and serve hot.
